Between 8 and 10 °C for most sparkling wines. Take the bottle out of the fridge fifteen minutes before serving: too cold and the aromas will be dormant, too warm and it will be heavy.
Count on 2 to 3 days in the fridge with a suitable stopper. After that, it's still drinkable, but the bubbles will have faded. No drama: finish it with friends.
Pinot often provides structure, Meunier fruitiness and roundness, and Chardonnay finesse and freshness. For us, the main idea is to know what you like in your glass.
