Oenological subtlety: Nose with floral and fruity aromas (iris, dried flowers, white fruits, citrus) with notes of vanilla and honey. Fresh and precise on the attack, round and vinous texture with subtle wood, and a long, persistent fruity finish.

Because we're all about champagne for friends: honest, good-tasting, without snobbery. We select vintages from winemakers we know — no empty "exceptional" marketing.
Aim for between 8 and 10°C for most sparkling wines. Too cold, the aromas are dulled; too warm, the alcohol dominates. Take the bottle out of the fridge about fifteen minutes before serving.
Means very little (or no) dosage liqueur added after fermentation: dry, straightforward profile, ideal if you like frank wine and sugar-free apéritifs.
Ideally 24 to 48 hours in the fridge with an airtight stopper — beyond that, the bubbles will flatten. If you don't finish the bottle, it's not a failure: it's an excuse for a second glass.
Appetizers, goat cheese, seafood, sashimi, or a no-fuss Sunday meal. Champagne is also for Tuesday nights with a well-garnished pizza — no judgment here.
